It sure not is 'off the beaten track' and a very touristic thing to do, but it really is a very enjoyable experience!
The Amsterdam canal cruises are almost as old as the channels themselves, and this is for a good reason. The view from a cruise boat is unique and you get to see some of the best spots in the city without getting out of your chair or waiting for a traffic light.
Most of the companies can be found near Central Station. If you walk out of the station, there is one immediately at your right hand side and if you would continue down the Damrak then you would several more on your left hand side.
There are all kinds of deals ('hopper' service, etc.) The best and most simple deal would be just the 1 hour cruise around the center.
